Healthy Veggie - A Tindora Stir-fry


Tindora is one of the veggies that came onto my plate only after I entered the kitchen. Its popularly known as Kovaikai in my place. Whenever I cook this veggie, I get a comment at home stating that its a 'Goat's Munch'.... meaning it was grazed only by the cattle a few decades earlier until its health benefits were revealed to our race. This humble veggie not only keeps a check on the blood sugar level but also an antioxidant and an immune system modulator.

This Ivy gourd stir-fry, though a very quick recipe is yet a tasty one too..... Just give this stir fry, a quick try....

All you need is..........

  • 2 cups cut Tindora
  • 1 finely sliced onion
  • 4 sliced garlic
  • 1/4 tsp turmeric powder
  • 1 tsp sambhar powder (or chilli powder)
  • 1 tsp mustard seeds
  • 1 tsp urad dhal
  • 1 tsp cumin seeds
  • 2 torn dry red chillies
  • 4 sprigs of curry leaves
  • 2 tsp oil
  • Salt to taste


Get going..........

Heat a kadai with oil and temper it with mustard, urad dhal, cumin, curry leaves and red chillies. Now throw in the onions and garlic. Saute them until the onions turn translucent. Add in the tindora pieces along with turmeric powder, sambhar powder and salt. Give it a stir. Add half cup of water and cook until the tindora pieces are completely done. Switch off the stove and garnish with lemon juice if desired.



Enjoy it hot with rice of your choice!!!!!!!!!!
