Spinach comes in on our menu very often. Due to its repetition, I always surf in for recipes with it. I came across this one which interested me. After a few additions and deletions I arrived at my Palak Pulao with Sweet potato. The taste was great and it was a wonderful way to push palak into everyone's tummy!!
You will need..........
- 1 bunch of spinach
- A handful of coriander leaves
- 2 green chillies
- 5 garlic pods
- 1 cup of basmati rice washed and soaked in 2 cups of water
- 1 thinly sliced onion
- 1 sweet potato cut into cubes
- 1/2 cup of chopped green beans
- 1 cinnamon, 2 cloves, 1 star anise, 1 bay leaf
- Salt to taste
- 2 tsp of oil
Get going..........
Heat a pan with 1/2 tsp of oil and saute spinach, green chillies, garlic pods along with coriander leaves for a few minutes. Switch off the stove, allow it to cool and grind it to a smooth paste.
Heat a pressure cooker with the remaining oil and temper it with cinnamon, clove, star anise and bay leaf. Throw in the onions and fry until they become translucent. Now add in the sweet potato cubes and green peas. Fry for a minute or two and then add in the ground palak paste. Saute it for about 3 mins and then add in the drained water from the basmati rice along with the required salt. When the water starts to boil, add in the rice. Give it a stir and close the cooker with the lid. Keep in low flame and allow it to cook until done, say for 10-15 mins. Now your Palak Pulao with Sweet potato is ready after you fluff up the rice.
Enjoy the palak pulao with onion raita!!!!!
