Zuchinni Bread


Belated 'Women's Day' wishes to all women and especially to those in my life...... A special thanks to you dear mom and sis.... for being my strength...... as always.... :-)
I baked this bread a week before not only to have a healthy snack, but also to finish up the zuchinni he bought from the market that week.... I was surprised to see such a huge zuchinni.... It was nearly 4 kg, just one zuchinni... it was such a HUGE one.... ( I should have taken a snap of it!!!) 

The Zuchinni bread came out so soft and moist. Every one at home loved it..... It was a sugarless one made from only honey.... After filling up the loaf tin with the batter, I had some left which were poured into muffin cups.... These zuchinni muffins were even more tastier and came out quickly out of the oven..... I loved them even more than the bread version.....


You will need..........
Wheat flour - 1 cup
All purpose flour - 1/2 cup

Baking soda - 1 tsp
Baking powder - 1 tsp
Vanilla essence - 1 tsp

Zuchinni - 1 cup (grated)
Honey - 1/2 cup
Yogurt - 1/4 cup
Oil - 1/4 cup
Orange - 1 (juice and zest)
Salt - 1/8 tsp


Get going..........

Take both the flours along with baking powder, baking soda and salt in a bowl. Mix them well or you can even sift them together for even mixing. 

In another bowl take honey, oil, yogurt and orange juice. Stir them well. Now add in the grated zuchinni and orange zest along with the vanilla essence. 

Fold in the dry ingredients into the wet ingredients until just combined. Pour the batter into a prepared loaf tin and bake in a pre-heated oven at 190 deg for 30 mins or until done. Cool them for about 10 mins before demoulding them. Once again cool on a wire rack completely before slicing.


Enjoy each slice with a spread of jam!!!!!!!!!!!!!!!!!
