Honey Wheat Fruit Muffins


The budget for this this financial year is all to be set out today..... Hopefully it would be a gifting budget as this is the last budget before the elections in the centre, due in 2014..... So I think there might not be much to worry about..... Already the prices of all the commodities have been sky rocketing and there are already much reasons to be concerned of.... 

I made these wheat muffins after being inspired by this and added my personal touches. It came out very soft and moist... with all the goodness..... Remember I told you that, while doing the Blueberry Coulis for the Panna cotta I kept the strained blueberry residue in the freezer? I've used it up in this recipe.....


All you need is..............

Whole wheat flour - 1 cup
Honey - 1/3 cup
Blueberry strain residue - 2 tbsp (the remains while making blueberry coulis)
Banana - 1 (mashed)
Orange - 1 (juice with the pulp)
Orange zest - 1 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Oil - 2 tbsp
Egg - 1
Vanilla essence - 1 tsp


Get going..........

In a bowl whisk flour, baking soda and salt. Set aside. In another bowl whisk the egg. Add oil, honey, mashed banana, orange juice with pulp, blueberry residue and vanilla. Mix everything until well incorporated. Now fold the dry ingredients to the wet ingredients. Add in the orange zest. 


Line a muffin tray with cups and fill them with the batter. Now bake them in a pre-heated oven at 190 deg for 15-20 mins until done. Cool them on a wire rack before storing them in containers.
