Yesterday, as we were on a walk along the waterfront, I was really very amazed to see the rise of the moon from the waterline..... remember it was a full moon day.... and with a boat sailing across..... it was just picture perfect... I blamed myself for leaving my canon baby at home.... unattended... when it could have been fed heavily with this sight.... Oh poor baby :-( .....
This recipe is probably one of the most easiest ever egg recipe. The preparation time is hardly quarter hour... and that too most of the time is for boiling the eggs.... The ingredients are very few... so when you feel lazy and want to prepare something with minimum ingredients, then this would definitely be your choice...
Eggs - 4
Onion - 1/2 (finely chopped)
Tomato - 1/2 (chopped)
Mutton Masala powder - 2 tsp
Jeera - 1 tsp
Salt - to taste
Oil - 2 tsp
Get going.........
Boil the eggs with enough water for about 10 mins. Remove the shell and halve them longitudinally. Place a kadai on stove with oil and temper it with jeera. Then add the onions and saute until they turn transparent. Now add the tomatoes, mutton masala powder with the required salt and add half cup of water. Then place the eggs with the cut side touching the bottom.Put the fire on low and cook until the gravy reaches the right consistency. Switch off the stove and garnish with coriander leaves.
Serve it warm with rice or roti!!!!!!!!!!!!!!!!!!!!!
To be noted....
- If you do not have mutton masala powder, replace it with 1 tsp coriander powder, 1/2 tsp chilli powder
and 1/2 tsp garam masala powder. Feel free to use chicken masala powder instead.
- You can add 1/2 tsp of ginger garlic paste when you saute the onions, for another version.
- You can top it with pepper powder and lemon juice, after switching off the stove.
