Zuchinni is one of the veggies that was introduced to me only very recently.... It can be quickly cooked..... and very healthy indeed...... This time I tried out a chutney with it... It came out really well with a tangy taste and was a very good side dish for dosa's.... The next day I had it mixed with rice and ghee.... it was tooo divine.....The original recipe is here... Just give it a try.....
Zuchinni - 2 cups (roughly chopped)
Garlic - 4 pod (roughly chopped)
Tamarind - a small lemon sized (soaked in 1/4 cup warm water)
Curry leaves - a sprig
Turmeric powder - 1/2 tsp
Channa dhal - 1 tbsp
Urad dhal - 1 tbsp
Jeera - 1 tsp
Red chillies - 4
Oil - 2 tsp
Get going..........
Heat a pan with oil. Add channa dhal, urad dhal, jeera, curry leaves, red chillies and garlic along with turmeric powder. Saute them for a min. Then add the chopped zuchinni pieces with the required salt and saute until it becomes tender. Switch off the stove. Cool completely.
Grind it along with the tamarind pulp to a smooth paste. Don't add too much water unless you want it runny.
Serve it with steaming rice and ghee.
Enjoy with dosa's or steaming rice or use it as a spread for bread!!!!!!!!!!!
