Zuchinni Stir-fry


Zuchinni is one of the veggies which holds a place in my market bag, not because its easily cooked but mostly because of its health benefits. It is one of the low calorie vegetables with absolutely no saturated fats or cholesterol. So is there a reason to look for cooking beyond this? I've already posted Oven baked crispy Zuchinni and Zuchinni Pachadi. Here's another on to this collection.....


You will need..........

Zuchinni - 2 (chopped)
Mustard seeds - 1/2 tsp
Urad dhal - 1/2 tsp
Red chilli - 2 (broken into two pieces)
Pepper powder - 1/2 tsp
Salt - to taste
Oil - 1 tsp


Get going..........

Heat a kadai with oil and temper it with mustard seeds, urad dhal and red chillies. Then add in the chopped zuchinni and give a quick stir. Add in the required salt. Zuchinni by itself lets out water while being cooked. So, do not add any water. Close the kadai with the lid for about 3 mins. Open it and cook until all the water dries out. This will be done quickly. Switch off the stove and add the pepper powder. 


Enjoy your zuchinni stir-fry with rice or roti !!!!!!!!!!!
