Oven Baked Crispy Zuchinni


There I come with another Zuchinni recipe.... I had two of them left after making the Zuchinni pachadi and wanted to bake something with them.... I came across this, and it excited me to the core... that I immediately made them for lunch... and had it along with rasam rice.... I liked it a lot, though he did not show much enthusiasm.... as he felt that it has to be more hot!!!!! 


The original recipe called for onion and garlic powder.... I just replaced them with onion and garlic paste.... The zuchinni's were so soft and well cooked, which matched with a crispy bread crumb coating and made a yummy combination with rasam rice. As it has only a few drops of oil drizzled over it.... it is a HEALTHY recipe too ;-).... Next time I promised him to make them more hot with finer bread crumbs, onion and garlic powder..... Nevertheless this was a good one!!!!!! Just give a try....



You will need..........

Zuchinni - 2 (cut into quarter inch round slices)
Bread crumbs - 1 cup
Egg - 1
Onion paste - 1/2 tsp
Garlic paste - 1/2 tsp
Salt - 1/4 tsp
Pepper powder - 1/2 tsp (increase it to scale more on the spicier side)
Olive oil - to be drizzled on top


Get going..........

You can make bread crumbs at home by just toasting the slices of bread and running them through a blender once they cool down....

Line a baking tray with parchment paper or oil it... In a bowl, whisk the egg along with salt, onion and garlic paste. Mix the pepper powder to the bread crumbs in another separate bowl.
Now take the zuchinni slices, dip them in the egg mixture.... roll them over the bread crumbs and place them in the baking tray... Repeat the process for all the slices.
If you have any bread crumbs left.... just heap them over the zuchinni...
Bake them for 20 mins in a pre-heated oven flipping them after 10 mins.


Now your oven baked crispy zuchinni is ready...Enjoy it as a snack too!!!!!!!!!!!!!!!
