Eggless Butterless Orange Cake


For over the past few days, the tamil film 'Vishwaroopam', has literally attained vishwaroopam, due to its controversies in release... Its really disheartening to see that freedom of expression in art is slowly tainting... Already India has lost an explicit artist like M.F.Hussain, who did not even have his last breath in his homeland.... 

Though their art, may or may not have a conflicting expression towards a section  of the community, everything must be talked out and settled amicably within. Abandoning the state is never a solution and is never a benefit in the interest of both parties.... Hussain was made to flee and now Kamal is optioning this out himself.... in either case, its a loss to the country on the whole... Its high time people start to understand 'Art is just art' as 'Cricket is just a game' and never to wed it with political thoughts.... 

  
The only comforting news of the past days was that India was climbing its way towards the subsequent stages in the world cup finals in Women Cricket.... Is it not a wonderful news? If only it wins the cup, then India would be the proud holder of all the world cups in cricket this year... Hope this comes true...


Coming on to today's post, its an Orange cake with no butter and no eggs.... I had some oranges lying on the counter for quite some time... and BINGO!!! the idea of this cake hit when I came across this recipe... As it had no butter and no eggs in it, I was all the more delighted.... I don't have to cream the butter (Yes, its quite difficult as I don't own a hand blender) and remember its comparatively down in calories....


You will need..........

Flour - 1 and 1/2 cups
Corn flour - 1/2 cup
Baking powder - 1 tsp
Baking soda - 1 tsp
Sugar - 1 cup
Salt - 1/4 tsp
Oranges - 2
Oil - 1/2 cup
Milk - 3/4 cup


Get going..........

Grate the zest of the two oranges. Then squeeze them and collect the juice in a container. Take both the flours along with the salt, baking powder and baking soda in a mixing bowl. Whisk them with a fork until well combined. (You can even sieve them twice for even mixing.)

In another bowl whisk oil, milk, orange juice and orange zest. Mix in the sugar and stir until dissolved. Now gently add the dry ingredient mix to this and fold them until everything is just combined.

Pour the batter in a prepared bundt pan and bake in a pre-heated oven at 180 deg for 25-30 mins until done. Then remove from the oven and cool it completely before slicing.


Enjoy this cake with a cup of coffee!!!!!!!!!!!!!!!!!!!

    1. Yes u can replace it with flour itself.... but u will miss the lightness of the cake... your cake would be slightly denser.... but it would still taste good....
