This is also one of the best lunch box recipes. In the mornings when you actually find no time (when u get up late:-() and moreover when there is no power..........don't worry. This is one of the recipes that require very less time and no grinding at all.
You will need..........
Rice - 2 cup (leftover rice makes it even more easier)
Carrot - 1 cup (grated)
Turmeric powder - 1/2 tsp
Hing - a pinch
Mustard seeds - 1 tsp
Urad dhal - 1 tsp
Peanuts - 1 tblsp
Dry red chillies - 4
Salt - to taste
Oil - 1 tblspn
Get going..........
- Heat oil in a kadai.
- Temper it with mustard, urad, chillies and peanuts. When they turn golden brown add turmeric and hing.
- Now add the carrots and saute it until they are cooked. Add salt.
- Now mix in the rice and witch off the flame.
Carrot rice is now all set to sit in your tiffin box. Just pappad would make it a yummy lunch.
