Stuffed Capsicum


Capsicum is one of the veggies that goes well with almost anything..... be it pizza, pasta, sambhar and anything.... you name. It has a whole lot of health benefits(who cares)....its tasty, tasty and tasty. Whenever I shop for veges, I get more attracted by the colors as they paint my kitchen with rainbowssssssssssss and capsicum has a greater percentage in it. This time I tried stuffing their belly's with other veggies and puting them into the oven. They not only tasted wonderful but also filled my kitchen with a wonderful aroma.... Try it out and let me know...
You will need..........


Capsicum - 2 (decapped and deseeded)
Carrot - 1
Potato - 1 (small)
Peas - 1/4 cup
Beans - 5
Onion -1/2
Green chilly - 2
Jeera - 1 tsp
Ginger garlic paste - 1/2 tsp
Red chilly powder - 1 tsp (for the extra kick)
Coriander - 2 tblsp
Oil - 2 tsp



Get going...........
  1. Boil the potato and carrot until they can be mashed easily. Cut all the vegetables into small pieces and microwave them to 3-4 mins or until cooked well. Chop the onion and green chilly finely.
  2. Heat oil in a kadai. Just roll the capsicum in it and place them on a baking tray. In the same oil, add jeera. After they sizzle add the green chillies onions. Cook till the onions turn translucent. Then add the ginger garlic paste and saute till the raw smell dissappears. Add the red chilly powder and fry for a min.
  3. Now, add all the cooked vegetables and mash them well until well combined. Switch off the stove. Add the coriander leaves and salt. Let the mixture cool a bit.
  4. Carefully stuff the mixture into the capsicums. Don't overload as they shrink during baking. Top the stuffing with a tsp of low fot butter.
  5. Bake in a pre-heated oven for 15-20 mins. 


Enjoy with rice or roti!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
